Can you set or change the default driving mode? I'd like to avoid having to change every time I get in.

Of the five modes I have on mine, you can set Personal, Expressive and Relax as startup modes. Sport and Efficient don't have that option.

Is there any point in asking why BMW won't allow us to set any other mode as default? Personally I would like to set efficient every time. Range is a huge factor in people's buying decisions when purchasing an EV, so you'd imagine many people want to get max range every time. Seems perverse to deny them defaulting to that option.

I'm not sure your question was answered? I can't see how to deactivate the current mode. It says select another mode which I do but then the start mode button stays on the original (personal) mode.

Efficient mode limits HVAC function and significantly changes the throttle response. There's quite a dead spot up front to absorb the momentum of the heavy lead foot! The throttle response feels like it's tuned for the freeway and coasting for maximum efficiency.

I guess there is a reason. I just want the most efficient as during the week most of my driving is through traffic.

Yes, you can, go to the modes and select the mode, there is a on/off switch set it to on, I like the personal for mine.
